I have finally completed what has been the most frustrating part of this whole process for me…my food boxes! YAY! My strategy is to send myself 2/3 of what I’ll need. I plan on filling the final 1/3 along the trail or with the care packages people might send me. BTW, I have added a tab at the top of my journal for care packages for those of you interested in sending me something along the trail.
Again, not all hikers choose to send themselves boxes. I chose to because I am a pretty picky eater and I’d rather not spend the time and energy figuring out my meals in unfamiliar towns after I’ve been hiking all day.
I’ve had a lot of questions about how I will get vitamins and protein along the trail. For the first time in my life, I have started taking a daily multivitamin. Be proud of me! I will also have Carnation Instant Drinks with powdered milk for calcium and vitamins. For protein, I will have energy bars and TVP (in my dinners) and I’ll be sure to eat high protein foods when I go through towns. Here are a few pics of my preparation and a general layout of the food I plan on eating along the trail.

Spaghetti w/Tomato Powder Sauce & TVP
*I will pour extra Olive Oil in my dinners to add fat and calories to each meal.
